How It Started
I have a confession: I used to hate coleslaw. Not dislike — hate. The kind of hate where you avoid it at all cost. I was a lifelong slaw‑avoider, fully committed to my stance.
And then… our cilantro‑lime coleslaw happened. It started as a side for our Friday Lunch Special back when I was doing the different Friday chilis.

The Turning Point
Somewhere between tweaking the dressing, balancing the lime, and getting the crunch just right, something shifted. I went from “absolutely not” to “okay wait, this is actually amazing.”
And I wasn’t the only one. Even Chris — who has always been firmly in the “no slaw ever” camp — took a bite and said, “Okay… this is really good.” We even used it as a topping on our chili (which, by the way, was a great idea). That’s when I knew we had something special.

It was so good, in fact, that I built an entire special around it:
