How These Two Soups Earned Their Place
Some soups earn their place on the menu because customers ask for them. Others earn their place because someone in the kitchen falls in love with them. Egg Drop and Roasted Poblano Corn Chowder managed to do both, which is why they show up every 1st and 3rd week of the month.
Roasted Poblano Corn Chowder
This soup is all about balance: smoky roasted poblanos, sweet corn, tender potatoes, and just enough cream to make it cozy without being heavy. It’s vegetarian, it’s comforting, and it’s the one people ask about before we’ve even turned the lights on.
Ariel has taken over making this soup, and it surprised her as much as anyone. She used to be firmly in the “I don’t eat soup” camp — until the smell of the poblanos roasting finally convinced her to try a spoonful. That was it. Love at first bite. Now she’s the one making sure every batch hits that perfect smoky-sweet balance.
Customers feel the same way. One regular orders his serving on Thursday so we can hold it for him to pick up on Friday — he just doesn’t want to risk missing out. And we’ve had people come in because their coworkers wouldn’t stop talking about it; they wanted to try it before it ran out.
Egg Drop

Joseph has taken over making Egg Drop, and it’s become one of his unexpected favorites. He was hesitant at first — the whisked eggs threw him off — but once he tried it, he was hooked. Now he’s the one making sure the broth is just right and the egg ribbons are soft and silky.
One of our customers loves it so much she buys one for lunch and another to save for breakfast the next morning because it’s that silky and comforting. And more than once, someone has walked in saying their whole office was raving about it, so they came to see what the fuss was about.

Neither of these soups came from family recipes or long traditions. They earned their place the practical way: customers love them, they fit the rhythm of the kitchen, and now they’ve become part of the weekly heartbeat of Executive Deli.
